It's six in the evening. The catamaran turns west and the Pitons—lit orange and amber—slide past as the sun drops toward the Caribbean horizon. Someone on deck is playing a steel drum. The island concentrates its most extraordinary romantic experiences in the south, around Soufrière and the UNESCO World Heritage Pitons. This is where you'll find boutique resorts carved into the hillside with private infinity pools cantilevered over the Caribbean Sea, where each suite has an open fourth wall looking directly at the mountains, where breakfast arrives at your private plunge pool by butler. But romantic Saint Lucia isn't only five-star hotels. The sea is usually calm in the late afternoon, the wind drops, and the light on the Pitons—if you've sailed south far enough—turns every shade of orange and red.

Sea Spray Cruises operates the island's most popular sunset cruise from Rodney Bay Marina: a two-hour catamaran with hors d'oeuvres, rum punch, and champagne as the sun goes down over the Caribbean. The journey west across the bay offers an unobstructed horizon with no land to the west until South America. On clear evenings, you occasionally catch the legendary green flash the moment the sun's edge hits the horizon.

Private charters are available for couples wanting complete seclusion. A dedicated boat, a crew of two, snorkel stops in quiet coves, champagne at anchor in the shelter of the Pitons—these experiences are booked directly through marina operators and typically need a week's advance notice in high season.

For a shorter romantic on-water moment, water taxis from Castries Harbour or Soufrière Bay will take you across to Anse Chastanet or Anse Mamin at dusk. Arrive at the beach as the light goes golden, swim in flat water with the Pitons overhead, and taxi back in the dark.

Saint Lucia has a remarkable density of experiences specifically designed for couples. The volcanic mud bath at Sulphur Springs is one of them: you stand in warm mineral pools smeared in dark volcanic clay while your skin softens and the surreal volcanic landscape steams around you. Pigeon Island National Landmark in the north offers a gentle two-hour hike through colonial ruins to Fort Rodney at the summit, with a 360° view of the northern Caribbean coast and across to Martinique. Marigot Bay at sunset. Order food at one of the waterfront restaurants, watch the sailboats settle in for the night, and listen to the tree frogs begin. The water turns pink as the light fails. It's a scene that requires no planning and costs almost nothing.
